Coonawarra has one of the longest growing seasons for Chardonnay in the world, allowing the fruit to develop and ripen slowly, with sufficient natural acidity for palate balance.
The finest parcels of fruit from the vineyard adjacent to Bond Road on the Wilgha property in Coonawarra were selected for inclusion in the Bond Road Coonawarra Chardonnay.
Fermented in French oak hogsheads, where it remains on yeast lees for six months, this Coonawarra Chardonnay has a complex palate with fresh, vibrant green apple, pear, melon and nectarine primary fruit flavours.
The resulting Hollick Coonawarra Bond Road Chardonnay is complex and restrained, with a crisp acid finish.
Serve with grilled fish, chicken or vegetable terrines and pasta or risotto with spring vegetables
