The palate is fine and fine-grained with cassis fruit, leather and a complex touch of earth.
This is a fresh classic Coonawarra Cabernet but reflecting a modern style. Selected from Quarry block Cabernet planted in 1990.
This vineyard produces small crops of very small berries. The fruit was harvested and berry sorted in the field, then crushed and fermented in open topped stainless steel tanks for 8 days.
The wine has a dense red colour with fragrant aromas of small red berries, cassis and crushed vine leaf.
Drinking well now but will improve with further careful cellaring.
“The bouquet is fragrant, with blackcurrant and an airbrush of Coonawarra mint, fine grained tannins first out of the block on the long; medium-bodied palate. Its those tannins, not oak that shape the overall impact of very good wine”

Extremely well paired with a lamb roast and mint sauce or lamb curry.
Aged in a combination of old and new French oat barrel.
