The palate is soft and rounded displaying pure dark berry and spice notes with well integrated well integrated oak and lingering fine graphite tannins. On the nose luscious brambly fruits of blackberry and blood plum complemented by subtle nutty oak from barrel fermentation and maturation.
The various wine components that make up this wine were fermented separately; the fruit was destemmed and crushed to fermenters where it was fermented on skins for 7 days.
The wines were then pressed and pumped to a mix of new and used French and American oak to complete fermentation.
Once fermentation was complete the wines were racked off lees, then returned to barrels for maturation. After 20 months maturation the individual components that make up this wine were assembled as a blend for bottling.
Drinking well now, however short term cellaring to an age between 5 to 8 years will bring out the best in this wine.
